Tuesday Food Review

Chicken Fajita Soup

This may sound like a recipe for a mature pallete but my kids love it!!  And its soo easy and works perfectly for those nights when you have to be a million places at once!  So here goes.

Ingredients:  1 can black beans rinsed and drained, 1 can of corn with juice, 1 can refried beans, 1 large can of chicken drained, 1 can of chicken broth, 1 jar of salsa (15 ounce), 1 can of diced tomatoes

1.  Open chicken and drain.

2.  Open black beans rinse and drain.

3.  Combine all ingredients in a pot and bring just to boil, stirring frequently to incorporate all ingredients.

4.  Remove from heat and serve in bowls.  “DRESS UP”  with a dollop of sour cream, sprinkle with shredded cheese and sliced green onions if you like.    Serve with tortilla chips.
